DUPLICATE BRIDGE PEANUT BUTTER COOKIES

A delicate light peanut butter cookie with an addictive sweet salty flavour.
Ingredients
  • 1 cup unsalted butter at room temperature
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla
  • 2½ cups unbleached all-purpose flour
  • 1 teaspoon baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon fine sea salt
Instructions
  1. In a large bowl sift together flour, baking powder, baking soda and salt. Set aside.
  2. Cream together very well butter and peanut butter.
  3. Add white and brown sugars and beat well, 5 to 10 minutes.
  4. Beat in eggs one at a time making sure the first egg is well assimilated before adding the second egg.
  5. Beat in vanilla.
  6. Stir in the flour mixture until just combined.
  7. Refrigerate dough for at least one hour. NECESSARY.
  8. Roll into one inch balls and put on parchment lined baking sheets.
  9. Flatten each ball with a fork making criss-cross pattern.
  10. Bake in preheated 375 F oven for ten minutes or until cookies begin to brown.
  11. DO NOT OVER BAKE.
