{"id":12,"date":"2024-02-23T12:00:33","date_gmt":"2024-02-23T12:00:33","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/wp\/?p=12"},"modified":"2024-02-23T19:59:51","modified_gmt":"2024-02-23T19:59:51","slug":"tomato-basil-soup-roxys-bistros-signature-soup","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=12","title":{"rendered":"TOMATO BASIL SOUP &#8230;ROXY&#8217;S BISTRO&#8217;S SIGNATURE SOUP"},"content":{"rendered":"<div class=\"pf-content\"><p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/tomato-basil-soup-wm.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-44\" title=\"tomato basil soup wm\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/tomato-basil-soup-wm.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/tomato-basil-soup-wm.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/tomato-basil-soup-wm-300x225.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Of all the soups we made at ROXY&#8217;S BISTRO in Regina, tomato basil soup was our favourite. \u00a0\u00a0 This\u00a0 soup tastes like the glorious days of summer.\u00a0 The tomatoes\u00a0 enhanced with basil and a whisper of oregano. \u00a0\u00a0 The very best part of this tomato soup &#8211; you\u00a0 make it twelve months of the year. \u00a0 The secret is\u00a0 canned tomatoes (but you must use top quality Italian canned whole tomatoes).\u00a0 The chicken stock should be a rich,\u00a0 home-made stock.\u00a0\u00a0 You do your culinary magic with onion, garlic, seasonings and dried basil (when fresh is not available).<\/p>\n<p>In a generous stock pot, over medium heat,\u00a0 saute the onions with oil,\u00a0 a good sprinkle of salt, more grinds of black pepper than you think you need, and around 1\/2 tsp red pepper flakes.\u00a0 When the onions become translucent (don&#8217;t brown them please) add the chopped garlic and saute for a couple of minutes.<\/p>\n<p><a href=\"http:\/\/belocchio.files.wordpress.com\/2011\/10\/img_00111.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0011\" src=\"http:\/\/belocchio.files.wordpress.com\/2011\/10\/img_00111.jpg\" alt=\"\" width=\"470\" height=\"352\" \/><\/a><\/p>\n<p>Put this onion mixture into a large sauce pan. \u00a0\u00a0 Add the basil and oregano, canned tomatoes and the tomato paste and lower your heat to simmer.\u00a0 Let this cook away while you are preparing the roux.<\/p>\n<p>In a medium sized saucepan melt the butter.\u00a0 Add the flour and cook for a few minutes.\u00a0 Use a wooden spoon to mix the flour as it cooks. \u00a0 Increase the heat a little. \u00a0 Add the chicken stock and using a balloon whisk stir the sauce until it thickens.\u00a0 Make sure your sauce is lovely and smooth with no lumps.<\/p>\n<p><a href=\"http:\/\/belocchio.files.wordpress.com\/2011\/10\/img_0014.jpg\"><img loading=\"lazy\" decoding=\"async\" title=\"IMG_0014\" src=\"http:\/\/belocchio.files.wordpress.com\/2011\/10\/img_0014.jpg\" alt=\"\" width=\"470\" height=\"352\" \/><\/a><\/p>\n<p>Add the roux\u00a0 to the hot tomato mixture and mix well.\u00a0 Stir in the cream.\u00a0 Your soup is ready.\u00a0\u00a0 Garnish with a spoonful of sour cream and fresh basil or flat leaf parley.<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\"> \t<link itemprop=\"image\" href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/tomato-basil-soup-wm1-800x198.jpg\" \/>\n<div class=\"item ERName\">TOMATO BASIL SOUP &#8230;Roxy&#8217;s Bistro&#8217;s signature soup<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Mrs Butterfingers<\/span><\/div>\n<div class=\"ERHead\">Prep time: <time itemprop=\"prepTime\" datetime=\"PT20M\">20 mins<\/time><\/div>\n<div class=\"ERHead\">Cook time: <time itemprop=\"cookTime\" datetime=\"PT20M\">20 mins<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT40M\">40 mins<\/time><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">6 &#8211; 8<\/span><\/div>\n<div class=\"ERSummary summary\">This soup was such a favorite at ROXY&#8217;S BISTRO we would make gallons every week. It&#8217;s a great soup because you can make twelve months of the year. There are two important elements. You use canned tomatoes(but you must use top quality Italian canned whole tomatoes). The chicken stock should be a rich, flavourful home-made stock.<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">1 medium onion finely diced<\/li>\n<li class=\"ingredient\">2 fat cloves of garlic, finely minced<\/li>\n<li class=\"ingredient\">2-3 tbs olive oil<\/li>\n<li class=\"ingredient\">salt, finely ground pepper, and red pepper flakes<\/li>\n<li class=\"ingredient\">1 generous tbsp dried basil<\/li>\n<li class=\"ingredient\">1 generous tsp dried oregano<\/li>\n<li class=\"ingredient\">1 28 oz can whole peeled tomatoes (Italian)<\/li>\n<li class=\"ingredient\">2 tbsp tomato paste<\/li>\n<li class=\"ingredient\">4 tbsp (2 oz) butter<\/li>\n<li class=\"ingredient\">4 generous tbsp flour<\/li>\n<li class=\"ingredient\">2 cups home -made chicken stock<\/li>\n<li class=\"ingredient\">1\/2 to 1 generous cup of whipped cream (your choice to the amount)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">In a large pan, over medium heat saute the onions with a good sprinkle of salt, more grinds of black pepper than you think you need, and around 1\/2 tsp red pepper flakes. Your choice to the amount of cream.
