{"id":125,"date":"2011-11-02T04:57:31","date_gmt":"2011-11-02T04:57:31","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/wp\/?p=125"},"modified":"2011-11-16T01:38:25","modified_gmt":"2011-11-16T01:38:25","slug":"garden-eggplant-cumin-spread","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=125","title":{"rendered":"GARDEN EGGPLANT CUMIN SPREAD"},"content":{"rendered":"<div class=\"pf-content\"><p><em>Pur\u00e9e d&#8217;Aubergines au Cumin<\/em><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_0007.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-126\" title=\"IMG_0007\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_0007.jpg\" alt=\"\" width=\"480\" height=\"360\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_0007.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_0007-300x225.jpg 300w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>The eggplants look so beautiful, so elegant, purplish-black, elongated, I almost hate to pick them.\u00a0 This summertime appetizer is a variation on the Middle Eastern <em>baba ghanouj.\u00a0 <\/em>I pick the eggplants when they are still small,\u00a0 less than 8 ounces.\u00a0 Their flavour is more delicate<\/p>\n<p>Ingredients<\/p>\n<p>4 small eggplants (each about 8 ounces)<\/p>\n<p>1 fat garlic clove, peeled<\/p>\n<p>1 generous tbsp sesame paste (tahini)<\/p>\n<p>2 tbs. freshly squeezed lemon juice<\/p>\n<p>1 scant tsp fine sea salt ( taste and add if necessary)<\/p>\n<p>A generous amount of freshly ground black pepper<\/p>\n<p>1\/2 tsp cumin seeds<\/p>\n<p>Preheat oven to 450 degrees F.<\/p>\n<p>Prick the eggplants all over.\u00a0 Place the eggplants directly on an oven rack in the centre of the oven (placing them directly on the rack allows the air\u00a0 to circulate as the eggplants cook-they roast rather than steam.)\u00a0 Pl;ace a baking sheet on the rack beneath the eggplants to collect any juices.\u00a0 Roast the eggplants until they are soft and collapsed, about 25 minutes.\u00a0 There is no need to turn them.<\/p>\n<p>Place the eggplants on a cutting board and trim off the steam ends and discard.\u00a0 Cut the eggplants in half lengthwise.\u00a0 With a small spoon scrape out the pulp;\u00a0 and discard the skins.\u00a0 Put the pulp into a food processor or blender.\u00a0 Add the garlic, sesame paste, lemon juice\u00a0 , seasonings and cumin seeds and blend thoroughly.\u00a0 Taste for seasoning.\u00a0 Transfer to a bowl\u00a0 and serve as an appetizer with an assortment of raw vegetables or crisp bread.<\/p>\n<p>Store in a covered container in the refrigerator for up to three days.<\/p>\n<p>A little taste of summer in Provence.<\/p>\n<\/div><div class=\"simple_likebuttons_container_small\">\r\n      <div class=\"simple_likebuttons_facebook\">\r\n        <div id=\"fb-root\"><\/div>\r\n        <script>(function(d, s, id) {\r\n          var js, fjs = d.getElementsByTagName(s)[0];\r\n          if (d.getElementById(id)) {return;}\r\n          js = d.createElement(s);
