{"id":1431,"date":"2012-02-18T20:30:16","date_gmt":"2012-02-18T20:30:16","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/wp\/?p=1431"},"modified":"2012-02-18T21:29:20","modified_gmt":"2012-02-18T21:29:20","slug":"emma-lake-summers-lemon-buttermilk-pancakes-and-breakfast-on-the-beach","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=1431","title":{"rendered":"EMMA LAKE SUMMERS   &#8230;LEMON BUTTERMILK PANCAKES  AND BREAKFAST ON THE BEACH"},"content":{"rendered":"<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0010.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" title=\"IMG_0010\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0010.jpg\" alt=\"\" width=\"480\" height=\"360\" \/><\/a><\/p>\n<p>Summer at the lake.\u00a0 Every time you say those words\u00a0 you conjure up memories of sunny days that lasted forever; floating\u00a0 in the cool, green waters of a Northern lake, sand scrubbed bodies stretched out to the sun.\u00a0 We spent our summers beside a small, quiet lake just north of Prince Albert,\u00a0 Emma Lake.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/image101.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-1458\" title=\"image10\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/image101.jpg\" alt=\"\" width=\"486\" height=\"640\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/image101.jpg 607w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/image101-227x300.jpg 227w\" sizes=\"auto, (max-width: 486px) 100vw, 486px\" \/><\/a><\/p>\n<p>We had a tiny cottage on the lake.\u00a0 A low bench of sand and birch trees shielded\u00a0us from the\u00a0 winds coming off the water.\u00a0\u00a0Against the bench of sand my Father had his outdoor kitchen, a few steps from the cottage.\u00a0 He cooked on an old black kitchen stove.\u00a0 A wooden table scrubbed white was both a prep counter and a place to eat.<\/p>\n<p>On the weekends our Father would drive up to the cottage.\u00a0 The car groaning under its load of fresh\u00a0produce and groceries.\u00a0 But for we children most important was the baking he had done during the week.\u00a0 Our favorite was Royal Bread Pudding.\u00a0 It was\u00a0\u00a0creamy,\u00a0 cinnamon flavoured,\u00a0raisin filled, \u00a0 bread pudding topped with a layer of pastry and then vanilla\u00a0icing.<\/p>\n<p>We loved our breakfasts at the lake. \u00a0 Pancakes cooked on top of the outdoor black stove.\u00a0\u00a0\u00a0 Dad would scour the top clean and build a roaring fire.\u00a0 He would use the entire surface of the stove to turn out &#8220;flap jacks&#8221;.\u00a0 These he would spread thick with butter, sprinkle with sugar and then squeeze lemon\u00a0all over.\u00a0 He would stack them high, keeping them warm in the oven as he continued to flip pancake after pancake.\u00a0 In the warm oven the butter melted into the sugar and lemon and drizzled into sweet pools around the pancakes.\u00a0 Ah, sweet heavenly delights.<\/p>\n<p>And what of the photograph of the osprey and we children on the beach?\u00a0 We had found\u00a0him struggling with a broken wing.\u00a0 Dad made splints from wooden matches and\u00a0 bandaged the wing.\u00a0\u00a0 We fed him raw meat. He became very tame while the wing was healing.\u00a0\u00a0 One day he was just gone.\u00a0 On the beach we found bits of the bandage and a few feathers. We knew our falcon was flying free high above us.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0007.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-1459\" title=\"IMG_0007\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0007.jpg\" alt=\"\" width=\"576\" height=\"432\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0007.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/02\/IMG_0007-300x225.jpg 300w\" sizes=\"auto, (max-width: 576px) 100vw, 576px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><strong>LEMON BUTTERMILK PANCAKES\u00a0 (makes 32 pancakes) <\/strong><\/p>\n<p>2 cups buttermilk<\/p>\n<p>4 tbs. (2 oz.)\u00a0 melted butter<\/p>\n<p>2 eggs at room temperature<\/p>\n<p>2 cups all-purpose unbleached white flour<\/p>\n<p>3 tbsp. sugar<\/p>\n<p>1 tsp. baking soda<\/p>\n<p>1\/2 tsp. salt<\/p>\n<p>To finish, lemon juice, butter and sugar, and maple syrup if desired.<\/p>\n<p>The amount of buttermilk you use will determine how thick these pancakes are.
