Tiny Union Jack flags stood at attention. \u00a0\u00a0 Tiaras glittered in the sunlight. A top hat was tipped.\u00a0 We all had dressed for the occasion.\u00a0 For dessert I made an old fashioned Victoria Sandwich Cake.<\/p>\n<p>Sir Edward Elgar&#8217;s Pomp and Circumstance soared through the air.\u00a0 We sang out loud and clear;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/uj_flying2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1883\" title=\"uj_flying\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/uj_flying2.jpg\" alt=\"\" width=\"640\" height=\"426\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/uj_flying2.jpg 640w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/uj_flying2-300x199.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Land of Hope and glory,<\/p>\n<p>Mother of the free,<\/p>\n<p>how shall we extol thee<\/p>\n<p>who are born of thee?<\/p>\n<p>A group of us, ex-pats and those with links to Great Britain watched as a flotilla of boats paid homage to the Queen.\u00a0 We toasted the monarch with champagne and nibbled cucumber sandwiches.\u00a0 The barbecue roared into action and fat bangers (sausages to you non-Brits) sizzled on the grill. The meal ended with my contribution to the celebration , a glorious old-fashioned British dessert, Victoria Sandwich Cake.<\/p>\n<p>This recipe is so easy to make one would almost call it nursery food.\u00a0 You can whip it up in a few minutes.\u00a0 There&#8217;s just a few ingredients, and other than whipping cream you will have these in your baking pantry.\u00a0 The cake is almost full proof and the cake is a fine crumb that holds together well.\u00a0 Since this recipe is from an old British cookbook of mine I&#8217;ll give their measurements, and those we are accustomed to.<\/p>\n<p>This recipe is for two layer cakes baked in 7 inch tins.\u00a0 As this size is not easy to find you can use 8 inch tins.\u00a0\u00a0 Since this made the layers a little thinner, and\u00a0 I wanted to make the big gesture, I baked the cake twice. (Yes, I could have doubled the recipe but I only had two pans)<\/p>\n<p><strong>VICTORIA SANDWICH CAKE<\/strong><\/p>\n<p>4 oz. (1 cup) self-raising flour (or l cup all purpose flour mixed with 1 1\/2 tsp. baking powder)<\/p>\n<p>dash of salt<\/p>\n<p>4 oz. (1\/2 cup) mixture margarine and butter,\u00a0 all butter or all margarine, or other combination at room temperature<\/p>\n<p>4 oz. (1\/2 cup) castor (granulated) sugar<\/p>\n<p>1 tsp. vanilla essence(extract)<\/p>\n<p>2 large eggs at room temperature.<\/p>\n<p>Pre-heat your oven to 350\u00b0F, ( Gas Mark 4).<\/p>\n<p>Brush your cake pans with butter . Line bases with a round of parchment paper and rub with butter.<\/p>\n<p>Sift the flour and salt into a bowl.<\/p>\n<p>Whip your butter in a stand mixer bowl until light and fluffy the add the sugar and vanilla and beat well.<\/p>\n<p>Beat in the whole eggs, one at a time, adding a tablespoon of the sifted dry ingredients with each egg.<\/p>\n<p>Now gently fold in the remaining flour with a large spatula.<\/p>\n<p>Divide the mixture equally between the pans.\u00a0 Spread evenly\u00a0 then tap the pans gently to disperse any air bubbles.<\/p>\n<p>Bake the cakes in the centre of the oven for 20 to 25 minutes, or until well risen and golden. Watch your cakes they have a tendency to bake on the quick side (depending on your oven).<\/p>\n<p>Remove from the oven and let cool in the pans for 5 minutes.\u00a0 Then turn out and cool on a wire rack.<\/p>\n<p><strong>TO ASSEMBLE THE CAKES<\/strong><\/p>\n<p>A lavish amount of your favorite jam.\u00a0 I used strawberry jam I made last summer.<\/p>\n<p>Whipping cream (for 2 layers l cup, for 4 layers 2 cups)<\/p>\n<p>1 to 2 generous tablespoons confectioners (icing) sugar.<\/p>\n<p>1\/2 to 1 tsp. vanilla extract<\/p>\n<p>On high speed in your stand mixer whip the cream until it starts to thicken.\u00a0 Add the sugar and the vanilla and continue whipping until the cream holds stiff peaks.\u00a0 Set aside in the fridge until needed.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0001.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1869\" title=\"IMG_0001\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0001.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0001.jpg 1024w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0001-300x225.jpg 300w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Spread jam generously over the top of three of the cakes.\u00a0 Put four squares of wax paper on your cake dish.\u00a0 This keeps the dish clean while you are assembling it.\u00a0 When the cake is completed gently tug each square of paper out from under the cake.<\/p>\n<p>Put the first cake layer on the plate.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0004.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1870\" title=\"IMG_0004\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0004.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0004.jpg 1024w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0004-300x225.jpg 300w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_00071.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1871\" title=\"IMG_0007\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_00071.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_00071.jpg 1024w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_00071-300x225.jpg 300w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>Spread whipped cream over the jam and put the layers together.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0012.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1872\" title=\"IMG_0012\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0012.jpg\" alt=\"\" width=\"1024\" height=\"768\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0012.jpg 1024w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2012\/06\/IMG_0012-300x225.jpg 300w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/a><\/p>\n<p>You can simply spread whipped cream on the top, or using a decorative pastry nozzle and bag do some fancy scrolls.\u00a0\u00a0 Refrigerate the cake until ready to serve.\u00a0 In keeping with the occasion I surrounded the cake with tiny red roses.<\/p>\n<p>Chef&#8217;s note:<\/p>\n<p>You can do a lot of different things with this simple cake recipe.<\/p>\n<p>1. Fill with a simple butter cream and your favorite jam.<\/p>\n<p>2. Add l oz. (1\/4 cup) finely chopped walnuts after beating in the eggs the put together with coffee flavoured whipping cream.<\/p>\n<p>3.
