cooking after the feast is over.\u00a0\u00a0 To serve more than six people simply roast two ducks.<\/p>\n<p>The trick to perfect roast duck is roasting it at\u00a0 two different temperature.\u00a0 You&#8217;ll get crisp skin and meat that&#8217;s not greasy by roasting first at a lower heat then increasing the temperature.<\/p>\n<p><a class=\"ingredient\">2 tbs. kosher salt mixed with a few grinds of black pepper<\/li>\n<li class=\"ingredient\">1 orange<\/li>\n<li class=\"ingredient\">1 cup water<\/li>\n<li class=\"ingredient\">Glaze<\/li>\n<li class=\"ingredient\">1\/4 cup freshly squeezed orange juice<\/li>\n<li class=\"ingredient\">1 tbs red wine vinegar<\/li>\n<li class=\"ingredient\">2 tsp orange liqueur (optional)<\/li>\n<li class=\"ingredient\">1 tsp sugar<\/li>\n<li class=\"ingredient\">Sauce<\/li>\n<li class=\"ingredient\">2 tbsp sugar<\/li>\n<li class=\"ingredient\">2\/3 cup chicken stock<\/li>\n<li class=\"ingredient\">1\/3 cup freshly squeezed orange juice<\/li>\n<li class=\"ingredient\">grated rind of an orange<\/li>\n<li class=\"ingredient\">pinch salt<\/li>\n<li class=\"ingredient\">2 tsp cornstarch<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Heat oven 375F.<\/li>\n<li class=\"instruction\">Make the glaze by mixing the orange juice, red wine vinegar and sugar in a small bowl and set aside.<\/li>\n<li class=\"instruction\">Make the sauce by melting sugar over medium heat swirling pan but not stirring until light amber in colour.<\/li>\n<li class=\"instruction\">Remove immediately from heat as the sauce will continue to brown.<\/li>\n<li class=\"instruction\">Add the chicken stock, orange rind and orange juice and return to medium heat and reduce to 1 cup.<\/li>\n<li class=\"instruction\">Dissolve cornstarch in 2 tsp water, stir into pan and simmer about 30 seconds until slightly thickened, and set aside.<\/li>\n<li class=\"instruction\">Trim any excess fat, rinse the bird inside and out, and pat dry.<\/li>\n<li class=\"instruction\">Slip your fingers or a rubber spatula between the fat and the meat to separate them.<\/li>\n<li class=\"instruction\">Prick the skin all over with a sharp-tined fork taking care not to prick the meat..<\/li>\n<li class=\"instruction\">Rub the outside with the olive oil and then massage the bird thoroughly with the salt and pepper mixture.<\/li>\n<li class=\"instruction\">Tie the legs loosely together.<\/li>\n<li class=\"instruction\">Refrigerate uncovered for at least two hours or longer.<\/li>\n<li class=\"instruction\">If possible turn on a fan to let the bird air-dry while it comes to room temperature.<\/li>\n<li class=\"instruction\">Put the bird in a roasting pan (preferably fitted with a rack).<\/li>\n<li class=\"instruction\">Pour the water into the pan.<\/li>\n<li class=\"instruction\">Position the pan so that the bird&#8217;s legs point toward the back of the oven.<\/li>\n<li class=\"instruction\">Roast for 45 min.<\/li>\n<li class=\"instruction\">Remove the pan from the oven and pour off the far and water.<\/li>\n<li class=\"instruction\">Separate the fat to use for basting.<\/li>\n<li class=\"instruction\">Return the bird to the oven with the legs facing the front of the oven. and increase the temperature to 400F.<\/li>\n<li class=\"instruction\">Continue to cook for another l hour and 15 minutes. During this time, pour<\/li>\n<li class=\"instruction\">grease off once or twice more.<\/li>\n<li class=\"instruction\">Refrain from basting for the last half hour of cooking time.<\/li>\n<li class=\"instruction\">Glaze the duck the last 15 minutes of cooking.<\/li>\n<li class=\"instruction\">The bird is done when the juices run clear from a thigh pricked all the way down to the joint and when a meat thermometer inserted in the inner thigh below the let joint reads 175F to 180F.<\/li>\n<li class=\"instruction\">Transfer the bird to a platter and tent loosely with tinfoil before carving.<\/li>\n<li class=\"instruction\">Serve with the orange sauce.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.2.1255<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<p>CHEF NOTES:<\/p>\n<p>When handling poultry products eliminate any chance of cross-food contamination by washing your hands thoroughly after touching the bird. Keep a sink filled with hot soapy water with a small amount of oxygen bleach while you are preparing the duck.\u00a0 The bleach will remain active for twenty minutes.<\/p>\n<p>Salting the skin of the duck several hours before roasting helps crisp the skin and keeps the duck moist.
