{"id":287,"date":"2011-11-05T06:19:23","date_gmt":"2011-11-05T06:19:23","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/wp\/?p=287"},"modified":"2011-12-17T03:19:11","modified_gmt":"2011-12-17T03:19:11","slug":"beef-keftedes-a-delectable-greek-appetizer","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=287","title":{"rendered":"BEEF KEFTEDES  .. a delectable Greek appetizer"},"content":{"rendered":"<div class=\"pf-content\"><p style=\"text-align: center;\"><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_00061.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-288\" title=\"IMG_0006\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_00061.jpg\" alt=\"\" width=\"480\" height=\"360\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_00061.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_00061-300x225.jpg 300w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><\/a><\/p>\n<p>Keftesdes , delicious little Greek &#8220;fritters&#8221; can be made with lamb or beef, zucchini, tomatoes or chickpeas.\u00a0 They are &#8220;can&#8217;t stop eating them&#8221; starters.\u00a0\u00a0\u00a0\u00a0\u00a0 So many wonderful fresh vegetables are available that dinner tonight will be heavily weighted on the vegetable side with accents of beef Keftesdes.<\/p>\n<p>Tender morsels of meat are redolent with coriander, cumin, cinnamon and nutmeg, fresh oregano.\u00a0\u00a0 The recipe is easy so double it and freeze the extras for nibbles.\u00a0 Just put them frozen into the oven to warm them through.<\/p>\n<p>Makes 20 Kewftesdes<\/p>\n<p>Canola oil, for sauteing and pan-frying<\/p>\n<p>1\/2 cup minced or grated onion<\/p>\n<p>kosher salt,<\/p>\n<p>1 garlic clove smashed beneath the flat side of a knife and coarsely chopped<\/p>\n<p>1\/2 cup diced day old bread<\/p>\n<p>1\/2 cup whole milk<\/p>\n<p>1 pound ground beef or lamb<\/p>\n<p>1 large egg<\/p>\n<p>1 generous tablespoon torn fresh oregano leaves,<\/p>\n<p>1 tsp. ground coriander<\/p>\n<p>1 tsp. ground cumin<\/p>\n<p>1\/8 tsp. ground cinnamon<\/p>\n<p>a really generous pinch of grated nutmeg<\/p>\n<p>freshly ground pepper (lots)<\/p>\n<p>all-purpose flour, for dusting,<\/p>\n<p>handful of fresh mint leaves, for serving<\/p>\n<p>3 lemons, first zested (for garnish) then cut into wedges<\/p>\n<p>1\/4 cup extra-virgin olive oil<\/p>\n<p>Saute your onions in a little canola oil.\u00a0 Add a good sprinkle of salt\u00a0 and cook for a couple of minutes until the onion is translucent, then add the garlic and saute for 2 or 3 minutes more.\u00a0 Turn onto a plate and set aside to cool.<\/p>\n<p>Put the bread in a small bowl and cover with milk.<\/p>\n<p>In a large bowl combine onion, garlic, meat and egg.\u00a0 Squeeze out the bread (discard the milk) and add the bread along with all the spices and a good teaspoon of pepper.\u00a0 Mix the ingredient until evenly distributed.\u00a0\u00a0 You can refrigerate this until ready to use (up to a day).<\/p>\n<p>Form the mixture in balls a little smaller than golf balls.\u00a0 Then squeeze gently to form into long oval shapes.\u00a0 Roll in flour and shake off any excess.<\/p>\n<p>In a large shallow pan, add enough canola oil to come up to about a third the height of a keftede.
