{"id":3073,"date":"2015-11-13T03:32:59","date_gmt":"2015-11-13T03:32:59","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/?p=3073"},"modified":"2016-01-15T23:09:13","modified_gmt":"2016-01-15T23:09:13","slug":"fiery-roasted-tomato-soup","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=3073","title":{"rendered":"FIERY ROASTED TOMATO SOUP"},"content":{"rendered":"<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2015\/11\/IMG_2140.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3072\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2015\/11\/IMG_2140.jpg\" alt=\"IMG_2140\" width=\"800\" height=\"600\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2015\/11\/IMG_2140.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2015\/11\/IMG_2140-300x225.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>We live out in the country wedged between the mighty Fraser River a few minutes walk\u00a0 north of us and the Pacific Ocean a short drive to the west.\u00a0\u00a0 This enviable location does come with a problem.\u00a0 A micro-climate with ground fog rolling across the farm lands and over my tomato plants.<\/p>\n<p>There is a secret to growing tomatoes in this will-of-the-wisp summer.\u00a0\u00a0 You plant them in big black plastic nursery pots. Then position these pots against a south wall preferably with a large overhanging roof.\u00a0 If you are fortunate this will give the tomatoes some protection from the heavy dew and ground fog.<\/p>\n<p>The only supermarket tomatoes I buy are\u00a0 Campari tomatoes. Eight small tomatoes in a precious plastic box.\u00a0 They have real,\u00a0 honest-to- goodness tomato flavour. I harvested seeds from these tomatoes.\u00a0 Early spring I started them indoors and then transplanted the strongest into pots.\u00a0\u00a0\u00a0 I ended up with six rather straggly plants left over and no more pots. Off to the compost heap with them.\u00a0 Until my good husband rescued them and planted them in the garden.\u00a0 They grew.\u00a0 They grew, and grew and produced tomatoes. \u00a0 Better tomatoes then the plants coddled in protective pots.<\/p>\n<p>The summer was unique.\u00a0 We had months and months of nothing but sun.\u00a0 The plants in the garden loved the heat.\u00a0 Not so the tomatoes planted in the pots.\u00a0 Day after day I would harvest the garden grown tomatoes.\u00a0\u00a0 A couple of pounds of these dazzling red darlings filling my basket.\u00a0 The final one day harvesting of the Campari tomato plants netted over forty pounds.\u00a0 All from six spindly almost thrown-away plants!<\/p>\n<p>This was the summer of enjoying tomatoes every day.\u00a0 Tomato, bacon and lettuce sandwiches (vegetables from the garden and our own bacon) &#8211; divine.\u00a0 Tomatoes baked in cream with thyme &#8211; sublime.\u00a0 And then tomato soup.\u00a0 Tomato soup so superb you&#8217;ll never go back to your old recipe.\u00a0\u00a0\u00a0 One big roasting pan filled with tomatoes, shallots, garlic, carrots, onion and the zinger &#8211; jalapeno chile.\u00a0 You roast it.\u00a0 Puree and then eat.\u00a0 FIERY ROASTED TOMATO SOUP &#8211; it just doesn&#8217;t get any better.<\/p>\n<div class=\"easyrecipe\" data-rating=\"0\">\t<link itemprop=\"image\" href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2015\/11\/IMG_2140.jpg\" \/>\n<div class=\"item ERName\">FIERY ROASTED TOMATO SOUP<\/div>\n<div class=\"ERClear\"><\/div>\n<div class=\"ERHead\"><span class=\"xlate\">Recipe Type<\/span>: <span class=\"type\">soup<\/span><\/div>\n<div class=\"ERHead\">Cuisine: <span class=\"cuisine\">Canadian<\/span><\/div>\n<div class=\"ERHead\">Author: <span class=\"author\">Mrs Butterfingers<\/span><\/div>\n<div class=\"ERHead\">Prep time: <time itemprop=\"prepTime\" datetime=\"PT15M\">15 mins<\/time><\/div>\n<div class=\"ERHead\">Cook time: <time itemprop=\"cookTime\" datetime=\"PT40M\">40 mins<\/time><\/div>\n<div class=\"ERHead\">Total time: <time itemprop=\"totalTime\" datetime=\"PT55M\">55 mins<\/time><\/div>\n<div class=\"ERHead\">Serves: <span class=\"yield\">4-6 servings<\/span><\/div>\n<div class=\"ERSummary summary\">Once you make soup this way you will never go back to your old soup recipe. One roasting pan filled with everything in the recipe.<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">2 generous tablespoons extra virgin olive oil<\/li>\n<li class=\"ingredient\">6 or so medium tomatoes, left whole<\/li>\n<li class=\"ingredient\">2 shallots, diced (about a cup)<\/li>\n<li class=\"ingredient\">2 fat cloves of garlic, smashed<\/li>\n<li class=\"ingredient\">3 carrots, peeled and chopped<\/li>\n<li class=\"ingredient\">1 sweet onion chopped (about 1 cup)<\/li>\n<li class=\"ingredient\">1 jalapeno chile, stem removed, halved<\/li>\n<li class=\"ingredient\">1 tsp kosher salt<\/li>\n<li class=\"ingredient\">1\/4 tsp freshly ground black pepper<\/li>\n<li class=\"ingredient\">3 to 4 cups of vegetable or chicken stock<\/li>\n<li class=\"ingredient\">Sour cream and parsley for garnish<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">This is one of those more or less recipes. The precise amount of vegetables is up to you but be generous with your tomatoes.<\/li>\n<li class=\"instruction\">For a less spicy soup use only half of the seeds of jalapeno chile.<\/li>\n<li class=\"instruction\">Preheat oven to 400F.<\/li>\n<li class=\"instruction\">In a large roasting pan toss together all the ingredients.<\/li>\n<li class=\"instruction\">Roast on the center rack of the oven for about 40 minutes, or until a little colour starts to show and the vegetables begin to soften. You want the vegetables to caramelize slightly. This is what gives this soup its distinctive flavour.<\/li>\n<li class=\"instruction\">Remove the pan from the oven and pour some of the stock over the vegetables. Scrap the pan to get all the brown bits up and loosen the vegetables.<\/li>\n<li class=\"instruction\">Scrap the vegetables into a sauce pan and add the rest of the stock.<\/li>\n<li class=\"instruction\">Using a hand held blender puree the soup.<\/li>\n<li class=\"instruction\">Bring the soup to the boil stirring frequently then reduce heat to a low simmer.
