  RECIPE FOR A TRULY SPLENDID PASTA DISH"},"content":{"rendered":"<div class=\"pf-content\"><p>MICHAEL&#8217;S\u00a0FRESH TOMATO PASTA\u00a0 for 4 people<\/p>\n<p>This is my son-in-law Michael&#8217;s\u00a0 signature pasta dish.\u00a0 It is simple to make yet complex in flavour.\u00a0 You can make it for one person or for six.\u00a0Give yourself a treat and whip it up for supper &#8211; at six or midnight.\u00a0 Just be sure you pick the ripest tomatoes.<\/p>\n<p>A couple of big fat garlic cloves<\/p>\n<p>2 tbs extra virgin olive oil<\/p>\n<p>Around 4 cups of small tomatoes<\/p>\n<p>A handful of fresh mint chopped<\/p>\n<p>A big handful of fresh basil chopped<\/p>\n<p>kosher salt<\/p>\n<p>! pound of spaghetti or linguine<\/p>\n<p>2-3 tbs capers, rinsed and drained<\/p>\n<p>A generous amount of grated parmigiano-reggiano<\/p>\n<p>Saute the garlic in the olive oil<\/p>\n<p>Crush the garlic cloves and slowly brown in a few tbsp of olive oil.\u00a0 When they are brown remove and discard them.<\/p>\n<p>While you garlic cloves are sending their heavenly aroma through your kitchen, skin as many small tomatoes as you can fit into your\u00a0 saut\u00e9 pan.\u00a0 To skin your tomatoes knife a cross on the bottom of the tomato then drop the tomatoes into boiling water for a couple of minutes.\u00a0 Drain and then skin them.\u00a0\u00a0\u00a0 Put the tomatoes into your saut\u00e9\u00a0 pan containing the garlic flavoured oil, and cook slowly releasing their juices.\u00a0 This takes just a few minutes.<\/p>\n<p>Bring your water to a rolling boil and add a generous amount of salt.\u00a0 Like sea water.\u00a0 Add the pasta and cook until tender , around 7-9 minutes.\u00a0\u00a0\u00a0 Then add to the tomatoes in the pan.\u00a0\u00a0\u00a0 Add salt and freshly ground black pepper and the capers.<\/p>\n<p>Put into serving bowls and top with the fresh herbs.\u00a0 Serve the parmigiano-reggiano cheese on the side.\u00a0 Now on simple is this.\u00a0 And how good!!<\/p>\n<\/div><div class=\"simple_likebuttons_container_small\">\r\n      <div class=\"simple_likebuttons_facebook\">\r\n        <div id=\"fb-root\"><\/div>\r\n        <script>(function(d, s, id) {\r\n          var js, fjs = d.getElementsByTagName(s)[0];\r\n          if (d.getElementById(id)) {return;}\r\n          js = d.createElement(s);
