a ways\u00a0 dominate your day.\u00a0\u00a0 \u00a0 This is the time to ladle out the exotic flavours of\u00a0 Thailand and Malaysia.\u00a0 And this is the soup that borrows from these cuisines\u00a0 and fills your soup bowl with its\u00a0 spicy taste balanced with sweet and sour back notes.<\/p>\n<p>I like this recipe for its ease of preparation and the readily available ingredients. \u00a0 The only time consuming\u00a0 part of the recipe preparation is the\u00a0 julienned\u00a0 carrots.\u00a0 The recipe calls for green beans.\u00a0 When they are out of season I substitute tiny frozen green peas.\u00a0 The recipe is easily doubled.<\/p>\n<p>The coconut milk I prefer to use is AROY-D.\u00a0 I also prefer\u00a0 AROY-D red curry paste.\u00a0\u00a0\u00a0\u00a0\u00a0 These products are class=\"ingredient\">2 generous tbsp julienned fresh ginger<\/li>\n<li class=\"ingredient\">2 tbsp red curry paste<\/li>\n<li class=\"ingredient\">1\/4 cup fresh lime juice<\/li>\n<li class=\"ingredient\">zest of one lime<\/li>\n<li class=\"ingredient\">2 tbsp soy sauce<\/li>\n<li class=\"ingredient\">2 tbsp brown sugar<\/li>\n<li class=\"ingredient\">1 (14 oz) can coconut milk<\/li>\n<li class=\"ingredient\">2 1\/2 cups vegetable broth (vegetarian version) or use 2 1\/2 cups homemade chicken stock<\/li>\n<li class=\"ingredient\">2 cups julienned sliced carrots (about 5 slender carrots)<\/li>\n<li class=\"ingredient\">1 1\/2 cups green beans cut into 1 inch pieces or 1 1\/2 cups tiny frozen peas<\/li>\n<li class=\"ingredient\">1 (14 oz) package water-packed soft or medium tofu cut into 1\/2 inch pieces<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Heat oil in a large,deep sauce pan over medium-high heat.<\/li>\n<li class=\"instruction\">Add garlic and ginger and saute lightly for about 30 seconds.<\/li>\n<li class=\"instruction\">Add curry paste and saute for 1 or 2 minutes, stirring constantly until combined<\/li>\n<li class=\"instruction\">Add brown sugar and cook for another minute or so.<\/li>\n<li class=\"instruction\">Stir in the lime juice, zest of lime and soy sauce and give it all a quick stir.<\/li>\n<li class=\"instruction\">Add the coconut milk and mix well.<\/li>\n<li class=\"instruction\">Add the broth and scrap up and brown bits in your pan.<\/li>\n<li class=\"instruction\">Reduce heat to low and cover and simmer gently for l hour. Don&#8217;t be tempted to shorten the cooking time.
