{"id":53,"date":"2011-10-30T23:24:48","date_gmt":"2011-10-30T23:24:48","guid":{"rendered":"http:\/\/mrsbutterfingers.com\/wp\/?p=53"},"modified":"2011-12-14T19:46:24","modified_gmt":"2011-12-14T19:46:24","slug":"thai-red-beef-curry-an-easy-to-cook-straightforward-curry-recipe","status":"publish","type":"post","link":"http:\/\/mrsbutterfingers.com\/?p=53","title":{"rendered":"THAI RED BEEF CURRY &#8230;. an easy to cook,  straightforward curry recipe"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/IMG_0031.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-72\" title=\"IMG_0031\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/IMG_0031.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/IMG_0031.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/10\/IMG_0031-300x225.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>The first time I made this recipe it was so spectacularly delicious the entire dish was consumed by two people.\u00a0 The Good Husband was even looking for more.\u00a0 This recipe should absolutely be in your apron pocket.\u00a0\u00a0 You could simple stop at the curry paste and coconut milk, but the\u00a0 grated lemon peel, ginger, fish sauce and brown sugar or honey gives the dish more layers of flavour.\u00a0\u00a0\u00a0 It&#8217;s so easy why wouldn&#8217;t you go for the gusto.<\/p>\n<p>Use this recipe as a blueprint for any Thai red curry\u00a0 and experiment with different ingredients in place of the beef.\u00a0 Boneless chicken or shrimp work well.\u00a0 Do a mixture of\u00a0 vegetables such as baby corn, eggplant,\u00a0 green beans,\u00a0 sweet potato and broccoli.<\/p>\n<p>Buy the best quality brand of curry paste available, some are better than others.\u00a0 If you find a good one, this will taste remarkably authentic.\u00a0 Also buy the best\u00a0 quality\u00a0 coconut milk.\u00a0 I like the organic brands.<\/p>\n<p><strong>THAI RED BEEF CURRY\u00a0 serves 4<\/strong><\/p>\n<p>1 tbsp. vegetable oil &#8211; canola or peanut<\/p>\n<p>1 1\/2 pounds sirloin steak, sliced into thin strips<\/p>\n<p>4 generous tbsp Thai red curry paste<\/p>\n<p>2\u00a0 14 oz. cans coconut milk<\/p>\n<p>The finely grated rind of a lemon<\/p>\n<p>2 tbsp Thai fish sauce<\/p>\n<p>1 generous inch piece of fresh ginger, peeled and grated<\/p>\n<p>1 tbsp brown sugar or runny honey<\/p>\n<p>10\u00a0 ounces broccoli cut into small pieces<\/p>\n<p>steamed basmati rice, to serve<\/p>\n<p>Heat the oil in a large saucepan.\u00a0 Add the beef and cook for 2 &#8211; 3 minutes, stirring, until just browned.\u00a0 Do not worry about searing the beef, just cook it until it changes colour.\u00a0\u00a0 Add the curry paste and continue cooking and stirring for 1 &#8211; 2 minutes to coat the meat.<\/p>\n<p>Add the coconut milk, lemon, fish sauce, ginger, and sugar or honey.\u00a0 Stir well, reduce the heat and simmer gently for 15 minutes.\u00a0 Taste add more fish sauce if necessary.\u00a0 Continue simmering, uncovered for about 15 minutes more.<\/p>\n<p>Add the broccoli, give it a stir and partly cover.\u00a0 Simmer gently for about 10 minutes more just until the broccoli is tender.
