A CHANGE IN THE RECIPE"},"content":{"rendered":"<div class=\"pf-content\"><p style=\"text-align: center;\"><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_13511.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1317\" title=\"IMG_1351\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_13511.jpg\" alt=\"\" width=\"640\" height=\"480\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_13511.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/IMG_13511-300x225.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>This is exotic and delicious recipe. \u00a0\u00a0 When I want to make something with an Asian flavour it&#8217;s my very favorite.\u00a0 \u00a0 However, I feel the dressing for the Asian Coleslaw\u00a0 has too much salt. \u00a0 \u00a0\u00a0 I suggest you salt to taste, but salt lightly.\u00a0 There&#8217;s a lot happening in the meat marinade so you don&#8217;t really need all that salt.<\/p>\n<p>If you are faint at heart when it comes to spicy food reduce the amount of Asian chili Sauce.\u00a0 This dish is just too good not to make.<\/p>\n<p>Serves 4-6<\/p>\n<p>1 large tenderloin about 1 1\/2 pounds.<\/p>\n<p>1\/3 cup soy sauce<\/p>\n<p>1\/4 cup rice vinegar<\/p>\n<p>3 tbsp. light brown sugar<\/p>\n<p>2 medium cloves garlic, minced<\/p>\n<p>1 1\/2 tbsp. peeled and minced fresh ginger<\/p>\n<p>1 tbsp. Asian chile sauce<\/p>\n<p>1 pound thinly sliced cabbage (about 6 cups)<\/p>\n<p>1 generous cup grated carrots<\/p>\n<p>4-6 scallions (both white and green parts) thinly sliced<\/p>\n<p>5 tbsp. canola or peanut oil\u00a0\u00a0 Kosher salt.<\/p>\n<p>Trim the pork of any silver-skin and excess far, and cut on the diagonal into 1\/2 inch thick medallions.<\/p>\n<p>In a small bowl whisk together the soy sauce, 2 tbsp of the vinegar, 2 tbsp. of the brown sugar, the garlic, ginger, 1\/2 tbsp. sesame oil, and 2 tsp chile sauce.\u00a0 Toss 1\/2 cup of this mixture with the pork medallions in a large bowl; reserve the remaining mixture to use as a sauce.\u00a0 Let the pork sit at room temperature or 25 minutes or refrigerate for up to 2 hours.<\/p>\n<p>Meanwhile, in another large bowl, toss the cabbage and carrots with half of the scallions, l tbsp canola oil, salt to taste, and the remaining 2 tbsp vinegar. 1 tbsp brown sugar, 1\/2 tsp tablespoon sesame oil and 1 tsp chile sauce.\u00a0 Let sit for 15 minutes, toss and again, and transfer to a large serving platter.<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/Pork-cooking-in-pan.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1724\" title=\"Pork cooking in pan\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/Pork-cooking-in-pan.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/Pork-cooking-in-pan.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/Pork-cooking-in-pan-300x225.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Heat 2 tbsp canola oil in a heavy 12 inch skillet over medium high heat until shimmering hot.\u00a0 Remove the pork from the marinade, shaking off the excess, and transfer the pork to a clean plate.\u00a0 Discard the marinade.\u00a0 Add half of the pork medallions to the skillet, spacing them evenly.\u00a0 Cook them without touching until well browned, about 2 minutes.\u00a0 Flip and cook until the pork is just cooked through (slice into a piece to check), about 2 more minutes.\u00a0 Set the pork on top of the slaw.<\/p>\n<p><a href=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/finished-pork-on-plate.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1725\" title=\"finished pork on plate\" src=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/finished-pork-on-plate.jpg\" alt=\"\" width=\"800\" height=\"600\" srcset=\"http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/finished-pork-on-plate.jpg 800w, http:\/\/mrsbutterfingers.com\/wp\/wp-content\/uploads\/2011\/11\/finished-pork-on-plate-300x225.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<p>Pour out the oil and the pan with paper towels (if the drippings on the bottom of the pan look like they may burn, wash the pan).\u00a0 Return the pan to medium high heat.\u00a0 Add the remaining 3 tbsp canola oil and cook the remaining medallions in the same manner.\u00a0 Top the slaw with the remaining pork and pour the reserved soy-ginger sauce of the medallions.
