The contents can sizzle and spit and everything stays IN the pan.<\/p>\n<p>It is a very heavy pan &#8211; 10 pounds. But two handles make it easy to handle. \u00a0 The bottom of the pan is very flat.\u00a0 It cooks so evenly there are no hot spots to burn its contents.<\/p>\n<p>It cleans beautifully &#8211; shiny as a new silver coin.\u00a0 Amazing when you realize this same pan had been used several thousand times in our little French restaurant, Roxy&#8217;s Bistro.\u00a0 I have great affection for this pan.<\/p>\n<p>I use this perfect pan to make\u00a0 Southern Italy dish PORK RAG\u00d9 with polenta.\u00a0 Pieces of boneless pork shoulder (Boston butt)\u00a0 browned in olive oil are slowly simmered in a robust rich wine tomato sauce fragrant with fresh thyme and rosemary.\u00a0 Then it&#8217;s served over the creamiest, most luxurious polenta you have ever tasted.<\/p>\n<p>I also use my perfect pan to make polenta.\u00a0 Think of polenta\u00a0 rich with whole milk, unsalted butter,\u00a0 seasoned with a little brown sugar and fine sea salt.\u00a0 Grate a little Parmigiano-Reggiano over it.\u00a0 Sprinkle the polenta with chopped fresh parsley and a drizzle of extra-virgin olive oil and you have polenta that is the stuff dreams are made of.\u00a0\u00a0 Polenta that compliments superbly your lovingly prepared Pork Rag\u00f9.<\/p>\n<p>There is a secret to this type of cooking.\u00a0 The Pork Rag\u00f9 tastes even BETTER after it dreams away in the refrigerator for a couple of days. \u00a0 This makes it the perfect dish for entertaining.\u00a0 You simply carefully reheat the Pork Rag\u00f9\u00a0 and\u00a0 whip up the polenta.\u00a0 Even the polenta benefits from a tiny rest before being plated.\u00a0 If you have any left over Pork Rag\u00f9 it makes a gorgeous sauce over pasta.\u00a0 It also freezes beautifully.<\/p>\n<p><a pounds skinless, boneless pork shoulder (Boston butt) cut into 2 inch chunks<\/li>\n<li class=\"ingredient\">Kosher salt and freshly ground black pepper<\/li>\n<li class=\"ingredient\">2 tbsp olive oil<\/li>\n<li class=\"ingredient\">1 large onion, finely chopped<\/li>\n<li class=\"ingredient\">6 garlic cloves (about 4 tbsp, finely chopped)<\/li>\n<li class=\"ingredient\">1 1\/2 tb. fennel seeds<\/li>\n<li class=\"ingredient\">1\/2 tsp red chili flakes<\/li>\n<li class=\"ingredient\">2 generous tbsp tomato paste<\/li>\n<li class=\"ingredient\">1 cup full-bodied red wine<\/li>\n<li class=\"ingredient\">2 14-oz cans whole peeled tomatoes (preferably Italian)<\/li>\n<li class=\"ingredient\">6 good sized sprigs fresh thyme<\/li>\n<li class=\"ingredient\">3 sprigs(about 3 inches long) fresh rosemary<\/li>\n<li class=\"ingredient\">2 tbs red wine vinegar for finishing<\/li>\n<li class=\"ingredient\">THE POLENTA<\/li>\n<li class=\"ingredient\">3 cups water<\/li>\n<li class=\"ingredient\">1 1\/2 cups whole milk<\/li>\n<li class=\"ingredient\">6 tb unsalted butter<\/li>\n<li class=\"ingredient\">4 tsp. light brown sugar<\/li>\n<li class=\"ingredient\">2 tsp fine sea salt<\/li>\n<li class=\"ingredient\">1 1\/2 cups polenta<\/li>\n<li class=\"ingredient\">Generous grindings of black pepper<\/li>\n<li class=\"ingredient\">Just-grated Parmigiano-Reggiano<\/li>\n<li class=\"ingredient\">Extra virgin olive oil<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Season pork with salt and pepper.<\/li>\n<li class=\"instruction\">Heat oil in a large heavy pot over medium heat.<\/li>\n<li class=\"instruction\">Cook pork, turning often, until evenly browned &#8211; 10-12 minutes.<\/li>\n<li class=\"instruction\">Transfer to a platter and sprinkle with 2 tsp salt and several good grinds of black pepper<\/li>\n<li class=\"instruction\">Leave the golden-brown pieces in the pan but remove any burned bits.<\/li>\n<li class=\"instruction\">Add a little more olive oil if need and the onion and garlic sprinkled with a little salt., the fennel seeds and the chili flakes. (Adding a little salt to the onions draws the moisture from the onions and assists in the cooking of the onion.)<\/li>\n<li class=\"instruction\">Saute stirring occasionally until the mixtures becomes translucent and a little brown.<\/li>\n<li class=\"instruction\">Add tomato paste and cook stirring occasionally until slightly darkened in colour, about 5-8 minutes<\/li>\n<li class=\"instruction\">Add the wine and scrape up any brown bits reducing the wine a little..<\/li>\n<li class=\"instruction\">Add tomatoes crushing them as you go, then add the whole thyme and rosemary.<\/li>\n<li class=\"instruction\">Add the pork with any juices accumulated.<\/li>\n<li class=\"instruction\">Bring liquid to a boil, then reduce heat to a gentle simmer, partially covered, until pork is very tender. (2 1\/2 &#8211; 3 hours) Sauce will thicken.<\/li>\n<li class=\"instruction\">Remove sprigs of thyme and rosemary.<\/li>\n<li class=\"instruction\">Taste and season with salt and pepper.<\/li>\n<li class=\"instruction\">Pork can be cooked 5 days ahead. Let cool, cover and chill in sauce.<\/li>\n<li class=\"instruction\">THE POLENTA<\/li>\n<li class=\"instruction\">In a large, heavy saucepan over medium high heat, combine the water, milk, 4 tablespoons of butter, the sugar and the sea salt and bring the whole to a simmer.<\/li>\n<li class=\"instruction\">Lower the heat, and with one hand, slowly shake the polenta from its cup into the simmering mixture while briskly stirring with a wooden spoon in the other hand.<\/li>\n<li class=\"instruction\">Adjust heat to its lowest setting, stirring constantly, and cook until the spoon will stand up by itself.<\/li>\n<li class=\"instruction\">Remove from heat and grind over the pepper and dot the polenta with the remaining butter.Let the polenta rest briefly to cool and firm up and bit.<\/li>\n<li class=\"instruction\">Sprinkle with the Parmigiano-Reggiano and top with Pork ragu.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<div class=\"ERNutrition\"><\/div>\n<div class=\"endeasyrecipe\" style=\"display: none;\">3.3.3077<\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<div class=\"simple_likebuttons_container_small\">\r\n      <div class=\"simple_likebuttons_facebook\">\r\n        <div id=\"fb-root\"><\/div>\r\n        <script>(function(d, s, id) {\r\n          var js, fjs = d.getElementsByTagName(s)[0];\r\n          if (d.getElementById(id)) {return;}\r\n          js = d.createElement(s);
