SPICY SHRIMP STIR-FRY .. (Bhuni Jhinga)

Today was one of those days I wanted to cook something different.  Nothing to complicated, but with lots of flavour,  exotic,   spicy.  Encrusted with spices, these stir-fried shrimp are hot, sour and delicious.

Serves 4 for a starter or lunch – 2 for dinner

450g medium-sized raw shrimp, peeled and deveined

1/4 tsp ground turmeric

1/8-1/4 tsp cayenne pepper or to taste

1 tsp ground coriander

1/2 tsp ground cumin

1/14 tsp salt

2 tbsp olive oil or peanut oil

1/4 tsp whole brown or yellow mustard seeds

2 fat garlic cloves minced

1 1/2  tsp or so lemon juice.

Wash the shrimp well.  Leave to drain in a sieve, them pat dry and place in a bowl.  Add the turmeric, cayenne pepper, coriander, cumin and salt.  Mix well.  Heat the oil in a frying pan over a medium-high heat.  Add the mustard and cumin seeds.  As soon as the mustard seeds begin to pop (a matter of seconds) add the garlic and stir once of twice.  Quickly add the prawns to the pan and stir once of twice.  Turn down the heat immediately to medium-low and let the prawns cook gently, stirring, until they are just cooked through (around 2-3 minutes). Add the lemon juice and toss to mix.  Serve straightaway.

  • 2 fat garlic cloves minced
  • 1½ tsp or so lemon juice.
