A couple of weekends ago I was helping out in the kitchen of a very dear friend. Her parents were coming for lunch and we were running late, so I offered to make the salad. Her Mom, Betty, asked if I would share the salad dressing recipe.
I make this dressing almost every day. I use it for salads or over left over chicken or meat. It’s quite thick which makes it a perfect dip for raw vegetables.
VIRGINIA’S SIMPLE SALAD DRESSING:
1 tbsp Dijon mustard
1 tbsp honey
1 tbsp red wine vinegar in your salad bowl.
Slowly whisk in 1/3 cup extra virgin olive oil and whisk vigorously until thick.
Now add a good sprinkle of sea salt or kosher salt and several grinds of black pepper. Taste to see if it needs more seasoning.
Toss an 8 oz container of mixed greens or a head of coarsely torn green leaf lettuce into the bowl. Now give it a good toss to coat each leaf with the lovely dressing. It’s that simple. If you want you can add any other fresh vegetables . perhaps some sliced red onion. It’s your call. But be assured. On those days when you want a salad, but don’t feel like going to the bother of making one, this is your answer. Enjoy.
