MIZUNA AND BEET ROOT SALAD … with feta cheese

Mezuna is a mild Japanese green with a spicy exotic flavour.  If you can’t find it in your market substitute watercress or arugula.  Mezuna is easy to  grow.  It certainly  grows prolifically in my garden.

This is an easy recipe with wonderful flavours.  Simply mound roughly chopped mezuna on a large platter.
Top with chopped cooked beets.  Sprinkle with feta cheese and some chopped green onion.  Drizzle extra-virgin olive oil and balsamic vinegar over and enjoy.  Now how easy is that!
